Slow and low Sous-Vide - Sous-Vide is a French term meaning "under vacuum", which refers to the cooking process sealing food in an air-tight container, typically a vacuum sealed bag, and cooking in temperature controlled water. A Pup Above cooks their food this way in non-boiling water for 2 hours. They are then cooled and frozen to preserve freshness.

Why Sous-Vide? - Cooking this way packs the food with more flavor, and being vacuum sealed helps retain all the moisture in the food, creating a natural tasty gravy. The lower temperature also helps preserve all of the nutrients typically lost in higher temperature environments. It also means fewer carbs, more protein and more moisture!
